The Right Coffee and Tea Temperature
The coffee for an espresso comes out of the machine at 70 degrees - this is the correct serving termperature for an espresso, anything above 70 degrees burns the coffee - so Mokador has designed the machine to deliver 70 degree temperature espresso everytime.
The espresso system comes with a warming tray on top of the machine. It's always a good idea to keep your mugs, cappuccino and espresso cups on top of the machine so as when you make a coffee of tea, the beverage temperature is not lost because of the temperature of a cold cup or mug.
If you pour the espresso into a cold cup, or shot glass you will notice a very rapid reduction in the temperature.
Alternately, if you have forgotten to put the cups on the warmer, you can warm your cups by running a steam cycle into the mug or cup whist you are getting the milk out of the fridge, or opening the coffee sachet/pod. This works just as well.
Making More than One Coffee/Espresso/Late'
If your making two or more cappuccino's we suggest its is best to make the espresso shots first and add the frothed milk second. This way the volume of the milk and its temperature restores the espresso temperature to give you a hot cappuccino everytime.
3 Cappuccino's In Under 3 Minutes.
Each espresso shot takes 25 seconds to pour into your warm cup. Allowing 5 seconds for the pod changeover, you should be able to make three espresso shots easily in under a minute and a half. Then froth the milk - half fill the stainless steel jug with cold milk, and run the steamer - this should produce enough frothed milk for three cappuccino's in under a minute. Pour the milk into the 3 espresso shots.
So thats 3 cappuccino's in two and a half minutes. Thats 30 second under 3 minutes.
Frothing the Milk ( for clients with a steam wand TOP STEAM model)
Pour cold milk into a stainless steel milk jug - 2cm to 3cm should be
sufficient for one cup of coffee. Hold the jug with one hand underneath, as
this is a good way of gauging the temperature of the milk during the milk
frothing process. Place the steam wand nozzle into the jug just below the
surface of the milk and towards the side of the jug, angle the jug slightly
and turn on the steam control switch by pushing the third button. You are
trying the get the milk to swirl in the jug. During frothing the milk will
expand so you will have to lower the jug small amounts at a time. By
lowering the jug a little more you will hear the traditional gurgling noise
than is typical of cafes as you introduce more air into the milk and get
larger bubbles - lowering it too much may cause the milk to splatter so be
careful.
When the stainless steel jug is too hot to hold - push the third button
again and the steam will turn off. Note: it may take a few seconds for the
pressure of the steam wand to completely shut off. If you allow the steam
cycle to continue beyond the "too hot to touch" temperature you will burn
the sugars in the milk and loose the froth.
The steamer is of commercial quality and one of the strongest features of the machine. You will find that you will not be reluctant to use the machine, because producing a cappuccino every-time is very easy.
The pressure of the steam cycle runs for 45 seconds and times out automatically. However it can be stopped by pushing the third button.
Remember to ALWAYS keep the steam wands nozzle under the milk during the milk frothing process. This is important when starting the steamer or until the point where steamer has completely shut down.
Frothing the Milk ( for clients with the AUTOFROTHER model)
Make sure you always use a warm cup. Do not use really cold milk straight from the fridge. You may have noticed good cafes use milk that has been left out of the fridge - to take the chill off it.
With the autofrother, frothing the milk is as easy as putting the frothing tube into milk and pushing the bottom button. The machine factory setting automatically froths the milk for cappuccino or latte to 60 degrees or drinking temperature.
If you like your milk hotter this can easily be obtained by resetting the autofrother. This is done by following these steps.
- turn the machine off at the green switch on the back
- remove the autofrother attachment
- push the top and second button in simultaneously, turn the machine on and keep the top and second button depressed for 6 seconds - this puts the machine in programming mode
- push the steam button in and hold it in
- whilst you keep the bottom button pushed in, push the top button , you will notice that each time you push the top button in, the machine pump slows - the slower the pump the hotter the froth.
- Replace the autofrother
- Turn the machine off
- Turn the machine on again, and your new pump speed has been set
- Make a hotter cappuccino

Cleaning the Machine
The Pepita is designed to be zero to very low maintenance, we recommend you:
- Empty the drip tray once a day
- Clean the nozzle and run a small amount of water through the machine after frothing milk,
- Take the pod out of the basket after every use.
